The Defected boss gives us his tips on the White Isle, from food to partying to hidden secrets.

Defected is one of the biggest dance music institutions in the world. Not only is the label iconic and home to some hugely influential tracks, the club nights and festival take overs have sent the brand stratospheric. It is a representation of everything that is right with the current house scene - and Simon Dunmore is the man behind it.
The brand was founded by him back in 1999, but the key behind Defected’s longevity has been its adaptability and openness. Dunmore has continued to sign and nurture fresh talent, rather than sticking to the tried-and-tested, predictable modes of operation in clubland.
The label is home to a contemporary group of talented DJs and producers including Sonny Fodera, Sam Divine, MK, Dennis Ferrer Franky Rizardo (check out Simon's set with him above). The head honcho has always ensured that he has preserved the artist-friendly approach, and the results show.
Although Defected is only on the White Isle for Creamfields Ibiza this year, the brand's disco sister Glitterbox is back at Space Ibiza, bringing its sequin clad mayhem to the superclub every Friday, so we thought it would be the perfect time to get some inside knowledge from Simon on the island he has grown so close to.
Where do you stay on the island when you're there and why?
I’ve owned a house in Santa Eulalia for over a decade. It’s my sanctuary, a place that I often think about when I’m living in London and that I appreciate when I’m there.
What makes Ibiza so special?
The balance of hedonism and well-being. The island has a natural aura, a beauty that is unparalleled.
Where are your favourite places to eat?
You’re spoiled for choice in Ibiza, but if I had to pick two, I’d say Cas Pagés, a Spanish restaurant between Santa Eulalia and San Carlos, and the Pizzeria over on Talamanca.
And the best places to go out?
When the music is right, Pacha is still the best club on the island for me. But obviously Glitterbox at Space is the night that I enjoy most.
Who do you think will be the star of the season this year?
Everybody is a star. I do not believe in, nor am I impressed by celebrity.
Where is the best place to watch the sun set and rise on the island?
Benirras, although not on a Sunday... it just gets too busy on Sundays.
For someone about to come to Ibiza for the first time, what are the three things they must do before their time is out?
Indulge yourself on a big night out. Go and see Es Vedra, either from up on the neighbouring cliffs or Cala d’Hort beach. Visit the north of the island, find a quiet beach and relax.
What’s the island's greatest hidden secret?
The east coast of the island. So many unspoiled great beaches and shacks that serve up great paella.
What is your fondest memory of your time spent on the island?
Every summer. Discover new places and meeting many like-minded people. I have had more great nights than I am able to remember.
And finally, what one bit of advice would you give someone hitting Ibiza for the first time?
